1、选用三刀联动。即切片、切条、切粒三组刀具调和动作。首先将肉切成片,然后切成条.切片、切条刀具均作住复运动。最 后切粒刀仿照人工切肉的动作,既作上下住复运动又作左右移动,完结由上而下的滑切,将肉条切成粒.
